New herb blends for summer and winter

The popularity of cheeses with herbs continues to grow and that is no coincidence. Consumers are increasingly curious about new and surprising taste experiences. An original combination of herbs can make all the difference on the shelf or on the cheese platter. The demand for blends that are just a little bit different and fit the season is growing. That is why In2Food is expanding the range of flavourings with two new herb blends: one for the summer and one for the winter.

Summer blend

The Summer Blend gives cheese a fresh, summery twist thanks to the lime and a balanced mix of herbs. Delicious with a glass of white wine or rosé on a warm spring afternoon or sultry summer evening.

The Summer Blend contains: tomato pieces, jalapeño pepper green cut, red pepper pieces, chili pieces, green pepper pieces, oregano whole, onion pieces, black pepper broken, garlic granules, parsley cut and lime granules.

Coating tip: Enhance the look and taste experience with a light red cheese coating. Rose, from the Botanical Garden colour line by Plasticoat ®, was specially developed for this Summer blend.

Winter blend

The Wintermelange is a spicy and hearty mix with pumpkin pieces that goes perfectly with cold days, for example a bock beer on a rainy evening or a glass of red wine after a winter walk.

The Wintermelange contains fenugreek seeds whole, leek pieces, pumpkin pieces, wild garlic, garlic granules, carrot pieces, black pepper broken.

Coatingtip: Choose a marbled cheesecoating, such as matte yellow Sunrise from the Matt By Nature color line or the warm red Leidse Red from the Dutch Originals color line by Plasticoat ®. By applying the coating in patches, a natural marble effect is created.

The new herbal blends are available in a handy 1 kilogram bucket.

Practical tips: how to use herbs in cheese

Processing herbs in cheese curds requires precision. The dosage, the right moment of adding them and the influence on the ripening process together determine the taste and quality of the cheese. In the knowledge article ‘Growth in distinctive cheeses with herbs: opportunities and practical tips for cheesemakers’ we provide a number of essential guidelines and practical tips in the field of dosage, pre-soaking, adding them during cheese production and coating the herb cheese.

More than just herbs: cultures also make a difference

A tasty Gouda cheese with herbs requires more than just a good herb blend. The chosen culture has a direct influence on taste, structure, acidity and ripening. In2Food helps cheesemakers choose a suitable culture that not only combines well with the herb blend, but also contributes to a stable maturation process and the desired end result.
